Here’s a delicious and easy-to-make paleo banana cookie recipe.
These cookies are super tasty and their texture is similar to that of sponge cake.
Preheat oven to 170°C (325°F).
Beat egg yolks and mash the banana. Mix them together. Add tahini and baking powder and mix everything well. If desired, add chocolate chips, chopped nuts or dried fruit and mix again.
Pour spoonfuls of the mixture onto a baking tray covered with baking paper. Leave enough space between them, because they spread a lot.
Bake for 8–10 minutes and keep an eye on them, making sure they don’t over-bake. Let cool and enjoy!
