Cozy Up Tomato & Butternut Squash Soup.
Heat olive oil in a large saucepan, then fry onions and garlic until translucent and fragrant. Take off heat and stir in dried herbs and butternut squash. Pour in chopped tomato, coconut milk and water and simmer over medium heat for 35 minutes.
Once butternut squash is very tender, take soup off heat and allow to cool slightly. Add salt and pepper.
Blend in a food processor or with a hand held blender until soup is silky smooth. If it is too thick, add a little water and blend again until you are happy with it.
Serve with a bread or flatbread of your choice and enjoy!
