An easy and delicious breakfast or brunch, tasty with bananas, pecans and just a touch of cloves and ginger!
Heat oven to 350ºF.
Crush bananas and set aside.
Beat brown sugar and butter. Beat in egg, vanilla, cloves and ginger. Add crushed banana and mix well. Add flour and baking soda and beat well. Stir in crushed pecans.
Grease muffin tins or use paper muffin liners. Fill to the top.
Bake at 350ºF for 18–20 minutes or until toothpick inserted in center comes out clean.
