These Polish Potato Pancakes are melt-in-your-mouth good and require only few ingredients to make. Topped with sour cream and chives!
Grate potatoes and onion with a food processor, or manually. Drain the mixture, discard the liquid, but reserve the starch.
In a bowl, beat eggs with garlic (if using), salt, and pepper. Combine potato and onion mixture, beaten eggs, and starch. Stir in the flour and mix well.
Heat the olive oil in a heavy skillet. Using a tablespoon, drop some of the mixture and spread out to a circle. Cook both sides until golden brown. When done, pat the pancakes dry with paper towels. Repeat with the remaining mixture.
Serve with some sour cream and chopped chives.
