These Blueberry French Toast Overnight Oats taste like the classic dish, in healthier form!
In a small bowl, mix together oats, almond milk, yogurt, cinnamon, nutmeg, vanilla extract, and maple syrup. You can also stir in blueberries, if desired, or wait to use as a topping just before eating.
Pour into a mason jar or airtight container with lid. Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid.
Remove from refrigerator, stir, and top with blueberries and a sprinkling of brown sugar, if desired. Enjoy!
