This quiche was the “non-meat” one prepared for Mother’s Day brunch and was a hit – even with my meat-loving husband. Glad I checked with the goddess, Martha Stewart, on how to carmelize onions otherwise I wouldn’t have known you need way more than a cup of raw onions to end up with a cup of carmelized ones. Also, it’s in my DNA that garlic must be included somehow, so I used garlic salt instead of regular salt. This was really easy and tasty – will fix again and again. Thanks Jenn!

This was really easy to make and very tasty! We had most of the ingredients on hand, but substituted regular mustard for the dijon mustard. The caramelized onion and feta added so much flavor. I should have used a deep-dish pie crust since I made a mess overfilling it! We’ll definitely have this again!

You can use frozen, chopped spinach. Just thaw and squeeze out all moisture. I flaked it up and placed it in the crust with the onions and grated cheese. I also chopped up a few pieces of cooked bacon and sprinkled that on top before pouring the egg mixture over it. I didn’t quite have enough Feta it called for. It was delicious!

when do you add the spinach? before or after the egg mixture? can you use frozen chopped spinach?
