5 minutes of preparation (before marinating overnight) to make this sweet and savory Japanese ramen egg. Perfect soft-boiled egg with soft-set yolk and just-set white.
First, use your preferred method to make soft boiled eggs. Set aside.
Mix water, cooking sake, mirin, sugar, light soy sauce, and dark soy sauce in a small bowl to create a marinade. Place all the eggs in the marinade.
Lay a paper towel over the eggs to soak up some of the marinade. Place the eggs in the fridge overnight. Serve cold!

Do you peel the eggs before marinating? Crack the shells? Or just marinate with shells intact?
