These seem too simple to be delicious, but they are! Only 2 ingredients and no baking required.
Unwrap and put Andes mints into a microwave safe bowl. Melt them in the microwave. You need to be careful not to burn them so melt for 30 second intervals, stirring between, and stopping once it’s smooth and melted. Coat crackers in melted mints, dipping them into the chocolate with a fork and allowing excess chocolate to drip off. Cool and let harden on waxed paper. Enjoy!

i’ve made something close to this with Girl Scout thin mints….lay one ritz then put a mint, melt in microwave for just a few seconds, put another ritz on top then coat in chocolate! EZ!!!!!!

This is MY recipe : ) Our oven was out, I needed to take a dessert to a gathering and was short on time, and I walked around the store thinking, “What is something really easy that doesn’t require baking that I can tonight as a dessert?”
I saw the Ritz Crackers and remembered my mom making chocolate covered Ritz when I was a child. Then I saw the Andes Mints and thought, “AHA! Thin Mints made ez!”
My son thought I was crazy. Then I saw the endcap item which was “Special Ritz Cookies”……Ritz own premade chocolate Ritz cookies….only a lot more expensive! I sad, “See! I’m NOT crazy!”
They were easy…..they were a hit……and they’re a standby now when we need a quick and ez dessert.
