Description

Dinner is ready in just 30 minutes and in just one pot with this One-Pot Beer Cheese Soup! This soup will make putting dinner on the table this winter super simple and super tasty!

Ingredients

  • 5 Tablespoons Unsalted Butter
  • 1 whole Yellow Onion, Diced
  • ⅓ cups All-purpose Flour
  • 1 cup Milk
  • 1 cup Half-and-half
  • 12 ounces, fluid Beer
  • 1 cup Chicken Broth
  • 1 teaspoon Spicy Brown Mustard
  • 2 cups Shredded Cheddar Cheese
  • ½ teaspoons Salt
  • ½ teaspoons Ground Black Pepper
  • Fresh Parsley For Garnish (optional)

Preparation

Place a pot over medium heat. Add butter to pan and allow to melt. Add diced onions and cook until onions have become translucent and soft, about 8–9 minutes. Whisk in flour until well incorporated. Allow flour and onions to cook for 1–2 minutes.

Add milk and half-and-half into the pot and whisk to combine. Allow mixture to heat until thickened (this should only take a few minutes). Once thickened, whisk in all remaining ingredients. Simmer until fully combined, hot, and cheese is melted.

Serve with parsley if desired.
