Description

Delicious chocolate cookie with a peanut butter filling. This is for all chocolate and peanut butter lovers.

Ingredients

  • FOR THE CHOCOLATE COOKIES:
  • 1-½ cup Flour
  • ½ cups Cocoa Powder, Unsweetened
  • ½ teaspoons Baking Powder
  • ⅛ teaspoons Salt
  • ½ cups Unsalted, Softened Butter
  • ½ cups White Sugar
  • ½ cups Packed Brown Sugar
  • ¼ cups Peanut Butter
  • 1 whole Egg
  • 1-½ teaspoon Vanilla
  • 2-½ teaspoons Milk

  • FOR THE PEANUT BUTTER FILLING:
  • ¾ cups Sifted Powdered Sugar
  • ½ cups Peanut Butter Plus 1 Tablespoon

Preparation

To make the cookies, combine flour, cocoa powder, baking soda and salt in a bowl and set aside. Next, in a large bowl, beat with an electric mixer the butter, both sugars and peanut butter. Then beat in egg, vanilla and milk. Add flour mixture and stir with a wooden spoon. Shape into 32 equal-sized balls.

To make the filling, mix powdered sugar and remaining peanut butter and shape into 32 balls. Wrap chocolate ball around the peanut butter ball, completely covering the peanut butter. Roll into a smooth ball.

Place on ungreased cookie sheets 2 inches apart. Slightly flatten cookies with a glass dipped in sugar. Bake at 350 degrees for 8 minutes. Cool on the pan for 1 minute and then transfer to a wire rack.

Wow! I was a little hesitant to try these at first because they seemed like a lot of work. While they do take a little more effort than plopping cooking dough onto a sheet, they are SO worth it! The peanut butter center is so creamy and the cookie itself is so soft and rich. I can’t wait for my husband to get home to try these….if there are any left!
