Delicious and unique Italian waffle cookies. These are some of my husband’s favorite cookies ever, and we make them every Christmas.
Cream butter and sugar. Add egg yolks and mix. Add vanilla and mix. Add dry ingredients. Beat egg whites in a separate bowl until stiff. Fold gently into the batter. Refrigerate for 2 hours or overnight.
Drop by spoonfuls (2 at a time) onto a galette maker (see related blog post for pictures and link). Close lid and let cook for approximately 1 minute. Remove cookies to a wire rack and repeat.
