A drop cookie that is delicious and easy to make.
1. Heat oven to 35o degrees. In a large bowl, stir brown sugar and butter until well blended. Add vanilla and egg; mix until fluffy. Stir in oats, flour, baking soda and salt. Add chocolate chips and nuts, if desired.
2. Drop dough on ungreased cookie sheet by rounded tablespoonfuls, about 2 inches apart.
3. Bake for 9-11 minutes. Cool and remove to a wire rack.
