Don’t be intimidated by the amount of ingredients. This is good stuff! This is very versatile. Use whatever veggies you have on hand.
Brown hamburger with chopped onion. Pour off most liquid.
Add diced tomatoes, beef broth and tomato soup. Add celery, carrots and barley. Boil slowly for 45 minutes.
Add frozen veggies. Simmer covered for 1 hour. Season to taste with salt and pepper.
