Melt-in-your mouth homemade caramels.
Cook all ingredients except vanilla over high heat to 210 degrees Fahrenheit, stirring constantly. Reduce heat to medium and, stirring occasionally, cook to 244 degrees F. Remove from heat. Add vanilla. Stir. Pour into a buttered square pan. Cool. Cut in squares and wrap each piece in plastic wrap or a small plastic candy bag.
Keep refrigerated, but soften before eating.
