It is always a good day for a skillet scramble. In particular a skillet scramble with peppers, onions, tomatoes, green onion and potatoes, served with a sunny side-up egg. So here it goes. Breakfast is served. Enjoy!
1. Bring a medium-sized pot of water to a boil. Boil potatoes for about 10 minutes or until fork tender. Then drain them and cut into bite-sized pieces.
2. Dice the onion, peppers, tomato and green onion.
3. In a medium-sized skillet over medium heat, sauté peppers and onions (save the green onions for garnish) until they start to soften.
4. Put potatoes in with peppers and onions and sauté till golden brown.
5. Add tomatoes and grated cheese and take pan off heat.
6. In another frying pan over medium heat, cook egg sunny side up.
7. Place veggies and potatoes in a bowl, top with egg and sprinkle with chopped green onion and fresh chopped parsley. Serve with a piece of bread.
