I had to come up with something that both utilized the annual leftover holiday ham and would still be something my 3 kids would ALL eat. Over the years, I’ve learned which beans they will and will NOT eat, so instead of grabbing the bag of 15-bean soup, I now do it THEIR way. And they EAT it!
Trim your ham of excess fat. Place ham in a stew pot just big enough to fit. Toss in the garlic, rosemary, celery salt and pepper. Add water JUST to cover ham. Bring to a boil, then turn heat to a medium-low setting and let simmer for an hour.
Remove ham and trim off the bone, shredding or cutting the meat into bite-sized pieces as you go. Strain the ham broth into another pot. Add ham pieces, diced tomatoes, and tomato soup. Simmer at medium-low heat for 30 minutes, then add the beans. Simmer for another 30 minutes.
Serve with crusty bread, garlic bread or your favorite rolls.
