Gooey lemon bar cookies that will melt in your mouth. The secret? No eggs!
Preheat your oven to 350 F and line a baking tray with parchment paper.
In a large bowl using an electric mixer, cream together butter, granulated sugar, lemon juice and zest. Add the baking soda, salt and flour and combine.
Roll the dough into your preferred size balls then coat them in icing sugar. Place them on the baking tray leaving about 2 inches between them.
Bake for 8 -10 minutes. The cookies should look dry on the surface but should not be brown. Remove from oven. Transfer to a cooling rack and leave to set up for 20 minutes. These cookies are very gooey!
