This breakfast quinoa is a great substitute to regular oatmeal! Served with pecans, bananas and coconut milk, this is sure to brighten up your morning!
In a medium saucepan over medium heat, bring quinoa, coconut milk, cinnamon, salt and vanilla to a boil. Reduce to a simmer, cover, and let it cook for 15 minutes until quinoa can be fluffed with a fork. Remove from heat when done.
Add quinoa into serving bowls and then cover with banana slices, pecans, brown sugar and an extra drizzle of coconut milk.
