Description

A chocolate cookie with rich chocolate, crunchy nuts and tart dried cranberries. These treats are Cookie Monster worthy!

Ingredients

  • 2 sticks Unsalted Butter
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 2  Eggs
  • 1 teaspoon Instant Coffee Granules
  • 3 cups Flour
  • ⅔ cups Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1-½ cup Chopped Walnuts
  • 1 cup Chocolate Chips
  • 1 cup Dried Cranberries

Preparation

First, set your oven to 350 F.

In a large mixing bowl using an electric mixer, cream the butter, white and brown sugar until light and fluffy. Next add the vanilla, eggs and instant coffee and whip some more.

Into a smaller bowl, sift the flour, cocoa powder, baking soda and salt. Add this into the butter mixture, one third at a time. Mix together till just combined.

Finally drop in your nuts, chocolate chips and cranberries then use a spatula to fold all this together. It takes a little elbow grease to get it all in but I know you can do it!

Now all that’s left is to roll the dough into walnut-size balls and plop them onto a parchment lined cookie sheet. Space them about 2 inches apart. With these cookies I always think the bigger the better! Bake them for 12 to 14 minutes and serve them with a glass of milk.

These are basically a twist the chocolate chip cookie but way more fun! I came up with these to combine all the things I love about cookies; crunchy nuts, rich chocolate and little something chewy and tart.
