To the rest of the world, these are known as over easy eggs. I did not learn this fact until I was 20, and ordering breakfast in a diner. My mother always called them dip it eggs, since she could not get me to eat white bread toast any other way!
In a skillet or frying pan, melt 2 tablespoons of butter.
When butter is melted to a golden brown, add the two eggs. Cook until the white is no longer runny. DON”T BREAK THE YOLKS!
Flip them if you must. Pepper to taste.
On a plate, place your toast (additional butter and jam optional) and the eggs.
Taking one piece of toast, dip it into one of the egg yolks. YUM! Repeat until your plate is wiped clean using the toast. (If no one is around, then you can lick it!)
