One-pan wonder of crispy potatoes, carmelized onions, ham and eggs cooked right in one pan!
Chop potatoes and onions into small cubes, about 1/4 inch in size. Heat oil in a cast iron skillet or frying pan until very hot. Add potatoes, and allow to brown on the bottom, around 2 minutes. Flip potatoes and allow to brown on the other side. Add onion and stir, allowing them to soften, another 2-3 minutes.
Add ham and stir again for another 2-3 minutes. Make a well (or indentation) in 4 spots in the mixture, all the way to the bottom of the pan. Crack one egg into each well. Sprinkle all with salt and pepper and cover for about 3-5 minutes or until the tops of the eggs are cooked but yolks are still soft and partly runny.

This looks great. I make it with shredded and chopped roast! It is so incrediby good. One thing I do when I mix the potatoes and roast together is add an egg. I grew up eating this. I think back in the day an egg was used for binding everything together. I’m sure my mom said that.
I have printed this and will definitely try it.
