Description

Amazingly chewy and simple oatmeal cookies with dried cranberries and white chocolate chips.

Ingredients

  • 1 cup Unsalted Butter, Softened
  • 1 cup Packed Light Brown Sugar
  • 1 cup Granulated Sugar
  • 1 Tablespoon Ground Cinnamon
  • 2 whole Large Eggs
  • ½ Tablespoons Vanilla Paste
  • 2 cups All-purpose Flour
  • ½ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1-½ cup Old Fashioned Oats
  • 1 cup Dried Cranberries
  • 1 cup White Chocolate Chips

Preparation

In a large bowl, beat together the butter, sugars, and cinnamon. Add eggs one at a time, beating well after each addition. Beat in the vanilla.

In a separate bowl, combine flour, baking soda, baking powder, and salt. Stir with a whisk. Fold the flour mixture into the butter mixture just until moistened. Stir in the oats, cranberries, and white chocolate. Cover and refrigerate for 2 hours.

Preheat the oven to 375ºF. Roll the cookie dough into 2-tablespoon-sized balls. Place cookie balls 2 inches apart on a parchment-lined baking sheet. Bake for 8 minutes. Allow cookies to cool slightly on the pan before transferring to a cooling rack to cool completely.
