Simple ingredients transform into this classic Tex-Mex breakfast dish.
Turn on the broiler in your oven. Spray both sides of the tortillas with olive oil spray. Place tortillas on a baking sheet and broil for 1- 2 minutes per side or until crisp. Remove tortillas from oven and cut into 1” X ½” strips.
In a large bowl, whisk together eggs, milk, salt and pepper. Set aside.
Melt butter in a large skillet over medium heat. Add onion, jalapenos, and bell peppers; cook until tender. Stir in chopped tortillas. Reduce heat to low.
Pour egg mixture into skillet, stirring gently. Cook until eggs are set. Top with shredded cheese and serve.
