These cookies have a nice flavor and they roll out very well. I was able to make 40 cut outs from one batch. At first I had trouble with the cookies expanding as they cooked. So I tried Amanda’s suggestion (in the comments somewhere, maybe her blog?) of then cutting out the warm cookie again and pulling away the extra before letting it cool. But then I finally decided to put the last tray in the freezer for 5 minutes and that pan was PERFECT!!! Wish i had thought of that sooner. They held their shape and I can’t wait to ice them tomorrow. Thank you for a yummy recipe.

This recipe was wonderful. I made them nice and thick because that is how I like my cookie. They were still soft, but held their shape. I used Amanda’s frosting recipe as well. Delicious and they truly made me look like a super cool cookie maker. Thank you!

I’ve made both of Amanda’s cookie recipes and I really do LOVE this one. The cookies do not spread and the cookie cutter designs really hold their shape beautifully.
I didn’t use the almond extract because I didn’t have any, so I substituted 2 teaspoons of vanilla bean paste, and BOY were these yummmmy! I also used Amanda’s frosting recipe and outline & spill method, all of which worked spledidly! This recipe is a keeper!!
