Caramel eggnog cookies, perfect for your holiday baskets.
1. Mix flour, baking powder, cinnamon and nutmeg in a large mixing bowl and set aside.
2. Mix butter and sugar together in the mixer until creamy.
3. Add egg yolks, eggnog and vanilla to the butter mixture and beat until creamy.
4. Add the flour mixture to the butter mixture and beat until creamy.
5. Add caramel bits to the cookie dough and stir by hand. Make sure that the caramel bits are frozen. This keeps them from melting too much when the cookies are baked.
6. Drop cookie dough by teaspoonfuls onto an ungreased cookie sheet and sprinkle with nutmeg.
7. Bake at 300 degrees for 20 minutes. Cool cookies on a cooling rack or aluminum foil. Put on a plate and enjoy!
Makes about 6 dozen cookies.

Cookies were VERY good and a big hit with everyone who tried them. I did not use specific types of vanilla, cinnamon, etc as written above… just plain ole’ WalMart ingredients. I also had a sticky problem, which I think was the caramel bits melting. I found that if I made sure no caramel goo was built up on the spatula (i.e., cleaned it off after every 2-3 cookies), I could scoop them off the sheet fairly easily. Also, sliding a knife under the completely cooled cookie seemed to work.

These cookies are so yummy. Did have some minor problems with sticking to parchment paper. Found if I lifted the paper off the cookie sheet, allowed to cool and then lifted cookies off the paper with a fork, I had fewer problems.

These are yummy and we followed the directions (my daughter and I were baking together), but we had super sticky problems. No matter what I tried, they still stuck to the cookie sheets and basically wouldn’t come off as a full, formed cookie. (tried different cookie sheets, tried parchment paper, tried different spatulas to lift them off, taking them off right away, taking them off after a few minutes, etc). Like I said – super yummy and everyone here thinks they taste great. I’ll have to see what I can figure out, though, for the sticky problem
