A traditional Indian egg preparation. Fast to make and delicious to eat. Can be used for breakfast, lunch or dinner.
Put a small skillet on the stove. Add in oil. Sprinkle some mustard seeds and allow them to pop. Then add in turmeric powder and red chilli powder; stir. Throw in the chopped green chili, then throw in the onion and fry until onion turns golden.
Now throw in tomato and let it sauté for a minute or two. Crack in both the eggs one at a time onto the skillet mixture and quickly give them a thorough stir. Do not allow eggs to settle in there. Add salt for taste. Keep on stirring the mixture until it gets completely dry and eggs are cooked.
Eat the eggs with the bread of your choice.

Can’t wait to try this… Husband is on a serious diet and eggs/egg whites are high on the approved list…
