Description

Tasty, super easy and really, really quick to make. You can have a batch of about 100 (depending on size) ready in under an hour.

Ingredients

  • 1 cup Granulated Sugar
  • 1 cup Soft Butter
  • 2 teaspoons Vanilla Extract
  • ½ teaspoons Salt
  • 2 Tablespoons Oil
  • 2  Large Eggs
  • 1 cup Cocoa Powder
  • ½ cups Corn Flour
  • 2-½ cups All-purpose Flour
  • Cookie Gun

Preparation

Preheat oven to 160 C fan assisted or 180 C on normal.

Add the granulated sugar to a mixing bowl. Add butter, vanilla extract, salt and oil. Mix the ingredients together using an electric mixer. Note that it will seem like the mixture has curdled, but just keep on mixing for a few minutes until you have a smoother mixture. Add the large eggs and beat the mixture until smooth. Set the mixture aside

In a separate larger bowl combine the dry ingredients: cocoa powder and flours and sift the ingredients together. Add wet ingredients that were set aside earlier.Beat the ingredients together with a mixer. The mixture will get quite thick due to the corn flour. Use a wooden spoon to continue mixing.

Cookie guns are very useful tools and will save you a lot of time, especially with this recipe! Choose your favourite attachment and fill the cookie gun with dough. Pipe the cookies onto a parchment paper lined baking tray, spacing them an inch or so apart. Bake for 12 minutes at 160 C fan assisted or 180 C on normal.

The bite size cookies are ready. Store them in a tin as they tend to go soft. Easy and delicious!
