Description

Pistachios + chia seeds = swoon!

Ingredients

  • ½ cups Water
  • ¼ cups Raw Sugar
  • ⅔ cups Shelled Unsalted Pistachios, Finely Ground
  • 2 cups Vanilla Unsweetened Almond Milk
  • 1 cup Plain Nonfat Greek Yogurt
  • ¾ cups Chia Seeds

Preparation

In a small saucepan, heat water to a boil. Add sugar, stirring constantly to dissolve. Reduce heat to medium and cook for 2-3 minutes, stirring constantly. Add in ground pistachios and remove from heat.

Pour sugar pistachio mixture into a glass container, then whisk in remaining ingredients. Cover container and refrigerate overnight, stirring every hour for the first 3 hours.

To serve, scoop pudding into serving glasses and top with additional crushed pistachios, if desired.
