This soup is so hearty, filling and packed full of cheesy, noodle-packed, goodness. It’s delicious and even better the next day warmed up for leftovers. Serve it with a side of nice, crusty, bread and it’s a perfect winter dinner.
In a large pot over medium heat, brown ground turkey with garlic and onion. Continue until no longer pink. Drain grease if necessary.
Return meat to pot. Add in tomatoes, tomato sauce, chicken broth, brown sugar, Italian seasoning and salt/pepper. Stir to combine a bit. Bring mixture to a boil, then reduce heat to medium and let it simmer for 15 minutes.
Add the lasagna noodles. Cook until tender (approximately 10-15 more minutes). Stir in Parmesan cheese.
If desired, garnish with shredded mozzarella cheese when serving.
