Black bean soup in as much time as it takes to heat the ingredients.
Drain beans and tomatoes and add to large saucepan. Add 2-4 chipotle peppers depending on how spicy/smokey you want the soup. Add salt and pepper if desired.
Using a hand blender, blend the ingredients to your desired consistency. If you like it chunky, you’ll want to mince the chipotles first–otherwise, hit them first with the hand blender.
Heat soup until warmed through. Serve and top with cheese, sour cream, cilantro or whatever you’d like.
