My sister, Gail, learned to make these cookies 40 years ago in her home economics class. They have been a family favorite all these years! Sweet and salty, with a melt-in-your mouth quality, these cookies are easy, delicious and gone in a flash!
Preheat oven to 350ºF.
In a mixing bowl, cream together butter and sugar with an electric mixer. Add vanilla and mix. Add flour and mix well. Add potato chips and mix well.
Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 12 to 15 minutes. Remove from oven and allow to cool for 2 minutes.
Remove from cookie sheet with a spatula and transfer to cooling rack. Dust with powdered sugar and allow to cool completely.
