Paleo Carrot Soup made with coconut oil and ginger—naturally sweetened with orange juice and a green apple. No added sugar.
Heat coconut oil in a large saucepan. Sauté onion, carrot, and apple in coconut oil until tender.
Add ginger to saucepan. Add orange juice, coconut milk and stock to saucepan.
Very carefully, in very small batches, puree mixture in Vitamix. Return mixture to pan to reheat, stirring in cayenne pepper, and stevia if desired.
Garnish with fresh lime. Serve.
