Description

A sweet, plump, soft-centered cookie that is slightly crispy on the outside and made with white chocolate, cranberries, pumpkin and oatmeal. Each cookie is only 45 calories!

Ingredients

  • ¾ cups Whole Wheat Pastry Flour
  • 1 cup Old Fashion Oats
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ¼ cups Truvia Baking Blends Or Double The Amount If You Use Granulated Sugar
  • ¼ cups Butter, Softened
  • 1 teaspoon Vanilla Extract
  • ½ teaspoons Cinnamon
  • ¼ cups Egg Substitute
  • ½ cups Canned Pumpkin (not Pie Filling)
  • ¼ cups White Chocolate Chips
  • ¼ cups Dried Cranberries

Preparation

Preheat oven to 350 F. Line two baking sheets with parchment paper; set aside.

In a small bowl, combine flour, oats, baking soda, and salt; set aside.

In a large bowl, add sugar and butter and beat at medium speed until well blended. Add vanilla, cinnamon, egg and pumpkin; beat well. Gradually stir in the flour mixture until well combined.

Fold in white chocolate chips and cranberries.

Drop tablespoon-sized scoops of cookie batter 2″ apart onto the prepared baking sheets.

Bake cookies for 8-10 minutes or until lightly browned on the bottom. Remove pans from oven and set them on a rack. Let the cookies cool on the pans for about 5 minutes.
