A lightened up classic chocolate chip cookie that is crispy on the edges, soft in the middle and chock full of mint chocolate chips.
Preheat oven to 375°F. Line 2 baking sheets with parchment paper; set aside.
In a small bowl add flour, salt and baking soda; mix until combined. Set aside.
In a large mixing bowl, beat butter, Truvía® Baking Blend and vanilla until light and fluffy. Beat in the egg. Gradually beat in the flour mixture. Stir in chocolate chips.
Drop rounded tablespoonfuls of dough on cookie sheets and press down to slightly flatten. Bake for 9 to 11 minutes or until lightly browned.
