Description

Fresh, delicious and tangy. Excellent as an appetizer or a light meal.

Ingredients

  • 6  Roma Tomatoes, Coarsely Chopped
  • 1  Medium Onion, Coarsely Chopped
  • 3 cloves Garlic, Chopped
  • ½ cups Chicken Or Vegetable Broth
  • 1  Small Zucchini, Coarsely Chopped
  • 1  English Cucumber, Unpeeled And Coarsely Chopped
  • 1  Red Bell Pepper, Seeded And Coarsely Chopped
  • ½ teaspoons Cumin
  • 32 ounces, fluid Vegetable Or Tomato Juice
  • Hot Sauce, To Taste (optional)
  • 2 Tablespoons White Wine Vinegar
  • ½ cups Fresh Dill, Finely Chopped
  • ½ cups Fresh Cilantro, Finely Chopped
  • Salt And Pepper, to taste
  • Drizzle Of Olive Oil For Serving
  • Squeeze Of Lime Juice For Servings

Preparation

1. Puree the tomatoes, onion, garlic and broth in your food processor or blender and then transfer to a large bowl.
2. Pulse the zucchini, cucumber, pepper, a dash of salt and pepper and cumin until veggies are small in size. Add this into the bowl.
3. Add the vegetable juice, a dash or two of hot sauce (if using), vinegar and finely chopped dill and cilantro into the bowl and then mix together.
4. Chill for at least 2 hours. Add salt and pepper to taste and then serve with a drizzle of olive oil and a lime wedge.
