Soft and tasty almond chews.
Preheat the oven to 350 F. In a medium sized bowl beat the egg whites until white and frothy. Set aside.
In a larger bowl mix almond flour and sugar together. Add the almond extract. Fold in the egg whites until a paste is formed.
Divide dough into one-inch pieces and place on a parchment paper lined baking tray, spacing them about 2 inches apart. Place a candied cherry on top of each piece and gently press it in.
Cook until the almond chews are golden brown, approximately 45 minutes.
Take them out of the oven and immediately cover with a damp towel. Let them cool.
