Description

On the go scrambled eggs? Try these delicious muffins. Feel free to change up the ingredients.

Ingredients

  • 1 pound Sausage
  • 1  Onion, Chopped
  • 12  Eggs, Beaten
  • 2 cups Cheddar Cheese, Shredded
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Salt
  • ½ teaspoons Pepper

Preparation

1. Preheat oven to 350 F.
2. Cook the sausage and onion in a skillet over medium heat. Once the sausage is browned and the onions are softened, drain off the grease and remove the skillet from the heat. Allow it to cool just a bit.
3. In a large bowl, mix sausage mixture and rest of ingredients together.
4. Spoon into muffin cups filling 2/3 way full. Recipe makes 12-14 muffins.
5. Bake for 25 minutes.

Serve with ketchup, salsa, sour cream, etc …
