Description

My mom makes these cookies every Christmas. They are super soft and lightly spiced, with a delicious and pretty icing glaze on top.

Ingredients

  • 1-½ stick Sweet/Unsalted Butter, Melted (if Using Salted Butter, Omit Additional Salt)
  • 1 cup Sugar
  • ¼ cups Molasses (Grandma's Original Molasses Recommended)
  • 1  Egg
  • 1-¾ cup Flour
  • ½ teaspoons Ground Cloves
  • ½ teaspoons Ground Ginger
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • ¼ cups Lemon Juice
  • 3 cups Powdered Sugar

Preparation

Preheat oven to 350 F and line 2 baking sheets with foil.

In a large bowl thoroughly mix together melted butter, sugar and molasses.

In a small bowl lightly beat egg and add it into the creamed mixture; blend well. Set aside.

In a medium sized bowl sift flour with spices, salt and baking soda, and add this into the creamed mixture (batter will be wet).

Drop tablespoon sized scoops of cookie batter on the foil-lined trays, leaving approximately 3 inches between cookies.

Bake just until they begin to darken, about 8-10 minutes. Remove pans from the oven and transfer cookies to a cooling rack.

Using a hand-held mixer, combine lemon juice and powdered sugar until a glossy icing is formed (may need more or less lemon juice, so add gradually).

When cookies have cooled completely, cover them in icing. Let them dry on racks.
