Great cut-out sugar cookie recipe. Easy to roll out and they keep beautifully in the freezer. Delicious!
Note: This recipe requires overnight refrigeration of the dough. So plan ahead!
In a large bowl cream the butter and powdered sugar using an electric mixture. In a separate bowl combine the flour, baking powder and salt. Alternate adding the flour mixture and eggs to the butter mixture until fully combined and mixed. Add vanilla and mix until incorporated.
Put plastic wrap over the bowl. Refrigerate the dough overnight.
Preheat oven to 350 F.
Portion out about one quarter of the dough and return the remaining dough to the refrigerator. On a lightly floured surface use a rolling pin to roll out the dough very thin, about ¼ inch thickness. Cut into desired shapes and place on a greased cookie sheet. Repeat with remaining dough.
Bake at 350 F for 8 to 10 minutes or until just set. The edges should not brown. Remove pans from the oven and allow cookies to cool on wire racks. Frost once cooled.
