A chunky little butter-based cookie filled with peanut butter chips, Reese’s pieces, and cashews.
Preheat oven to 350ºF. Line 2 baking sheets with parchment paper; set aside.
In a large bowl, beat butter on high speed for 30 seconds. Add brown sugar, granulated sugar, baking soda and salt. Beat until combined.
Beat in eggs and vanilla extract until combined. Beat in as much flour as you can with the mixer. Stir in any remaining flour. Fold in Reese’s pieces, peanut butter chips and cashews.
Drop the dough using a cookie scoop and place 2″ apart in baking sheet.
Bake in oven for 10–13 minutes, until the bottom is lightly golden. Let cool on cookie sheet for 2 minutes then transfer to a cooling rack to cool completely.
