Talk about an easy cookie! I always grew up thinking snickerdoodles were hard to make but they really are not. In fact, there’s not even a lot of ingredients in them. Most of what you need I’m sure you already have in your pantry. They are a great Christmas treat!
Preheat oven to 400 F. In a large bowl mix together butter and 1 1/2 cups sugar until smooth, then add eggs, cream of tartar, and baking soda and mix to combine. Stir in flour until well mixed.
Put the cinnamon and sugar into a shallow bowl and mix to combine.
Roll dough into balls about 1″ in diameter and roll in cinnamon and sugar to coat. Place on ungreased cookie sheets and bake 8-10 minutes.
Cookies are done when they are just barely browning. Remove them from the oven and let them sit on the baking sheet for a minute or two before placing the cookies on a rack to finish cooling.
Makes 48 cookies.
