Amazing healthy cookies that are soft, creamy and chocolaty. Your guests will never guess they are made of chickpeas!
Preheat your oven to 350°F. Line a cookie sheet with parchment paper.
Blend chickpeas in a blender until they have a paste-like texture (don’t worry if some small chunks are left).
In a large bowl combine blended chickpeas, peanut butter, sugar, vanilla and baking powder. Mash everything together using a big spoon until well combined.
Once everything is well combined fold in dark and white chocolate chips.
Place tablespoon-sized scoops of dough on the cookie sheet leaving an inch or two between each and bake for 30 minutes.
