A lighter and butterless way to enjoy cake!
1. Preheat oven to 360°F. Line a loaf pan with parchment paper.
2. Beat the yogurt, eggs and sugar until smooth. Stir in the flour gradually, then the baking powder. Stir in the oil and coconut.
3. Pour into prepared pan, sprinkle with sliced almonds and extra grated coconut. Bake for 40 minutes. Remove from oven, wait a few minutes before removing from pan, then serve warm or at room temperature.
