Apple Crumble Cake

Ingredients

  • FOR THE APPLE FILLING:
  • 5 whole Granny Smith Apples, Peeled, Cored And Cubed
  • 2 Tablespoons Unsalted Butter
  • ¼ cups Brown Sugar
  • 2 Tablespoons Maple Syrup
  • 1 teaspoon Ground Cinnamon
  • FOR THE CAKE:
  • 1-¼ cup Granulated Sugar
  • 2-¼ cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 2 sticks Unsalted Butter, Cold And Cut Into Cubes
  • 1 whole Egg
  • 1 Tablespoon Milk
  • 1 teaspoon Vanilla Extract

Preparation

To prepare the apple filling, put all of the filling ingredients in a skillet. Cook over medium heat for about 10 minutes, stirring occasionally, until the apples are soft. Remove from heat and allow to cool to room temperature.

Preheat oven to 350 F. Grease a 9-inch cake pan and line the bottom of the pan with parchment paper.

Mix sugar, flour, baking powder and salt in a food processor. Add butter and process until the mixture resembles coarse meal.

Spoon out half of the mixture and put it in a bowl. Set aside.

In a measuring cup, mix egg, milk and vanilla. Pour into the bowl with half of the flour mixture. Stir to combine then pat it into the prepared pan.

Top with the apple filling. Crumble the remaining dough mixture over the apple layer.

Bake in preheated oven for 45 to 50 minutes, or until top is slightly brown. Cool completely before serving.

Good recipe, but the bottom crust was a little soft for my taste. Otherwise my husband and daughter loved it.
