A crumb bar with plum filling, suitable for breakfast on the go.
Preheat oven to 350 F.
For crust, combine butter, nuts, flour, brown sugar, oats, salt, baking powder and baking soda, stirring until crumbly. Reserve about 1 1/2 cups of the crust and set it aside. Press the rest into a greased 9×13 pan.
Bake at 350 F for 12-15 minutes, until brown. Remove it from the oven and set aside.
In a bowl, combine sugar, cinnamon, flour, butter, lemon zest and juice. Add diced fruit (you can leave the skins on the plums) and toss to coat.
Pour fruit filling over baked crust. Top with reserved crust mixture. Bake at 350 F for 35-40 minutes, until brown. Then remove it from the oven and let it cool completely. Then cut into 24 bars.
