Perfect Peanut Butter Cookies

Description

My search for the perfect peanut butter cookie was over when I made these crackly-on-top, crispy-edged, gooey and peanut buttery throughout morsels.

Ingredients

  • 1-¼ cup All-purpose Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ½ cups Butter, Softened
  • 1 cup Peanut Butter, Creamy Or Crunchy, Your Preference
  • ¾ cups Sugar, Plus More For Rolling Cookies
  • ½ cups Brown Sugar, Firmly Packed
  • 1 whole Egg
  • 1 Tablespoon Milk
  • 1 teaspoon Vanilla

Preparation

Preheat oven to 350 F. Line two baking sheets with parchment paper.

In a mixing bowl, stir together the flour, baking soda, baking powder, and salt. Set aside.

In the bowl of a stand-mixer fitted with the paddle attachment, beat the butter and peanut butter together until smooth and fluffy. Add the sugars and mix until combined. Then incorporate the egg, followed by the milk and vanilla. Gradually add in the flour mixture and beat until thoroughly combined.

Put a few tablespoons of sugar in a shallow small bowl for rolling your cookies. Using a medium cookie scoop, portion out your dough, roll each into a ball and roll each ball in the sugar until coated on all sides. Place them on the prepared baking sheet, allowing room for the cookies to spread out while baking.

Bake for 10-12 minutes (mine were perfect at 11), being careful not to overbake. The cookies will look slightly underdone in the center, but they are not. They will set up as they cool.

I made these on Thanksgiving and they were a hit! Absolutely delicious cookie. Peanut Butter cookies are not my favorite, but this recipe changed my mind. They are incredible!!

The first bath of cookies did not spread, they were mounds. I took a glass and pressed the
second bath on the cookie sheet before I baked them. Any ideas why this happened? Otherwise husband thought they were the best PB he had tasted. I became a cookie maker late in life after grandkids started along so I am still an amateur, but your recipe was easy to follow and I had all the ingredients at home.

These really are perfect. I just made a double batch, one for home and one for the office. I think everyone will love them. Nice texture, great flavor. Very easy to make. My oven took 13 minutes to get them a nice golden brown. Thanks for sharing.

Wow! This is the best peanut butter cookie I have tasted. The only change I made was, instead of rolling it in sugar, I added peanut butter chips. Just amazing.

Definitely the best peanut butter cookie I’ve ever made! Better than Subway’s ;) To reduce the fat, I used light margarine instead of butter and lowered the oven to 325 for 8 minutes per batch. Ooh lala!
