Tasty and healthy no-bake cookies. Made with rolled oats, almond butter, cocoa powder, and honey roasted almonds. A great little after-school snack or special lunch box surprise.
In a bowl combine oats, almonds, chia seeds, and cinnamon.
In another bowl, add honey, almond butter, and cocoa powder. Heat in microwave (about 30 seconds) or on stove until mixture is slightly runny. Stir in vanilla.
Pour almond butter mixture into oat mixture. Mix it up with your hands, and form into goldball-sized bites.
Roll into diced almonds. Store in fridge. Enjoy.
