Description

For coffee lovers only!

Ingredients

  • FOR THE CAKE:
  • 2 cups Flour
  • 2 cups Sugar
  • ¼ teaspoons Salt
  • 2 sticks Butter
  • 3 Tablespoons Instant Coffee Crystals
  • ½ cups Buttermilk
  • 2 whole Eggs
  • 1 teaspoon Baking Soda
  • 2 teaspoons Vanilla
  • _____
  • FOR THE ICING:
  • 1-½ stick Butter
  • 1 pound Powdered Sugar
  • 2 Tablespoons Instant Coffee Crystals
  • ¼ teaspoons Salt
  • 4 Tablespoons Heavy Cream

Preparation

Preheat oven to 350 degrees. Grease and flour two round baking pans.

In a large bowl, mix sugar, flour, and 1/4 teaspoon salt. Set aside.

Melt 2 sticks of butter in a pot over medium-low heat. While that’s melting, add 3 tablespoons instant coffee to 1 cup boiling water. Set aside.

Once butter has melted, add coffee mixture to the butter in the pot. Let it come to a boil for about ten seconds, then turn off the heat. Set aside for just a minute.

In a separate bowl, add buttermilk, eggs, baking soda, and vanilla. Mix until well combined.

Pour the butter/coffee mixture into the flour mixture. Stir the mixture together gently. The purpose here isn’t to mix it together perfectly, but to cool down the heat before adding the egg mixture.

Add in the egg mixture and stir gently until well combined. Then pour into pans. Bake for 20 to 22 minutes or until set.

Allow to cool completely.

Combine all icing ingredients, then ice the cake. Chill for an hour before serving.

This was SOOO yummy!! I brought it to our church picnic, and it was gone very quickly. I used a little less instant coffee than what the recipe calls for, and to the icing I also added a tablespoon of cocoa. Believe me, everyone loved it!

Love this cake!!!! I made it for my Father-in-laws birthday, there was also German Chocolate cupcakes AND a blueberry torte at the party…no one could stop eating the coffee cake!! Fool proof and delicious!

Love the flavor and moistness of this cake. I made 12 cupcakes and 1-8 inch layer. I had only planned to make the cupcakes, but I didn’t have enough pans for the amount of batter.

I decided to turn the layer cake into a dessert form of PW’s Dulce Le Leche Coffee. I warmed 1/3 cup dulce le leche and 2 T Kaluha in a saucepan while the layer cake was baking. As soon as I removed it from the oven I poured the glaze evenly over the cake. I served it topped with whipped cream and grated chocolate. YUM!

I used this recipe to make cupcakes today. The baking time turned out to be about the same. Delicious.

Second time I made this cake I put a layer of regular frosting in the middle and simply covered the outside with ganach. Wow! So good. Guess this would be a mocha version. I’ve also considered a carmel icing.

Very good. Next time I will but a name brand instant coffee, for more uniform coffee crystals. My icing didn’t turn out all that great. I kept getting a bitter coffee taste, because my cheap instant coffee had big clumps in it.

I volunteered to bring the dessert for a work potluck BBQ just so I could make this cake, albeit in cupcake form. I made the batter and icing with instant espresso for a richer flavor, and the result was incredible: a moist, intensely flavored yet not-too-sweet cake (with an amazing crumb) paired with a delectable icing that tasted like Haagen-Dazs coffee ice cream. Everyone’s eyes were practically rolling, and a scuffle broke out over who got to take the extra ones home! Another can’t-miss recipe from the PW.
