Description

Quiche that makes its own crust! Adapted from another recipe.

Ingredients

  • 6 strips Cooked Bacon, Sliced/chopped
  • 1 whole Medium Onion, Diced
  • 6 whole Large Eggs
  • ¾ cups All-purpose Flour
  • ¾ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ¼ teaspoons Dried Thyme
  • ¼ teaspoons Mustard Powder
  • 1 pinch Cayenne Pepper
  • 1 cup Shredded Cheddar Cheese
  • 1-½ cup Milk
  • ¾ cups Half-and-half

Preparation

Preheat oven to 400 degrees. Lightly grease a quiche pan (I actually used an 8 x 11 glass dish for this).

In a medium frying pan, cook bacon; set aside. Reserve some of the drippings and saute onions in them until translucent and tender. Set aside to cool.

In a large mixing bowl, whisk together eggs, flour, baking powder, and spices. Whisk in milk and half-and-half, then stir in the onion mixture. Pour quiche base into prepared pan. Top with cheese and bacon. Bake for 25 minutes, or until center is set and the outside edge is golden brown. Let sit for five minutes, then slice and serve.

Note: I just made this today. It is good, but I think it needs a bit more kick (hot sauce or more cayenne). Also, I do not recommend stirring the bacon into the egg mixture. It might be better to nestle it with the cheese on top.

i’ve never made a quiche before, so this was pretty easy. i would recommend putting the cheese on top first, then adding the bacon. might stay a bit crispier this way maybe? i added chopped green onions at the end right when i pulled it out of the oven. it just tasted like it needed something but i couldnt figure out what!

I made this with just a few personal tweaks and it came out great! Be sure to grease the baking dish well.
