Soothing comfort food and great for a cold!
Note: I buy a rotisserie chicken from the store that’s seasoned and shred it.
Place all ingredients except milk and butter in a large pot. Make sure potato is cut to where it can easily be blended. Bring to a boil, then reduce heat and simmer, covered for 20 minutes, stirring occasionally. Blend with an electric mixer, handheld mixer or blender until smooth. Add milk and butter and stir thoroughly while bringing just to boiling.
Serve hot garnished with more parsley.
Cooking time may vary according to your stove. I use a gas stove so it heats a lot faster.

You simmer in in the chicken broth.

Since I dont add milk and butter at the beginning, do I “simmer” the potatoe and all in what? add water? To simmer in? Thanx.
